Baingan Ka Bharta

BAINGAN KA BHARTA

is k liye sub se pehle ap baingan ko chooley ko uper aag jala ker jala leyn....us k bad araam se us ka chilka utar ker us ko achi tarhan se pees leyn....chopper mein na peeseyn...balke hath waley tareekey se peeseyn...i mean dori danday se pees leyn....

us k bad usey ek bartan mein daal ker is mein dahi mis kereyn....agar 4 baingan hain to us k liye 8 baray spoons...saalan dalnay waley use kereyn....

ab karhai mein oil daleyn...is mein bareek kata hua pyaz daleyn...4-5 pyaz...ab ye thora sa gal jayen to is mein tamatar daleyn...bareek katey huye sirf 2.....us k bad is ko bhooneyn aur phr baingan wala mixture daal deyn.....achi tarhan pakayen....sath hi salt aur black peper daal deyn....green chillies kat k daleyn....

jub oil nikal aye to ap ka baingan ka bharta ready hai....black pepper chirak ker garam garam roti k sath khayen

baigan ki chaTni

1.darmayanay siz k gol walay 4 baigan laiN... issay achi tarah check karaiN k yeh tazay aur aur iski skin chamak.daar ho... koi soraakh yaa daagh dhabbay nah ho

2. har baigan main 10 bareek hole karkay 05 holes maiN chilay howay lussan aur 05 holes maiN red chilli Thoos daiN.

3. baigans yaa to tazah bujhay howay tandoor ki raakh (ash) maiN ghanTa bhar k liyeh choR daiN yaa choolhay ki low aag par rakh daiN... baiga ko thoRi thoRi dair k baad ulaT palaT kartay jayaiN hatta k poora baigahn pilpila hojaye ... gal jayee... koi15-20 mint lagengay

4. ab baigan ko choolhay say otaar kar iskay chilkay ko cheel kar alag kar laiN... iss maiN ThoRi imli, namak, kaali mirch, aur garam masalah /chaaT masalah (thoRa say just for smel) Daal laiN

5. in sab ko sil baTTay par pees laiN ...bareek nahi balkay thoRa moTa... ya juicer grinder maiN mix kar laiN thoRa sa paani Daal saktay haiN... jab thick-paste ban jaye to thoRa say sarsouN ka kaRwa tail aag par paka kar oss maiN zeerah bhoon kar paste ko taRka laga daiN

behtareen chaTni tayyar hai... daal chawal k saath nosh karaiN... aur haaN khatay waqt my rizvi ko yaad rakhna nah bhoolaiN... lol
